Ingredients

Smoked Salmon Salad:
  • 6 ounce mixed green salad
  • 4 ounce smoked salmon cut into pieces
  • 1 ounce pistachios shelled and crumbled
  • ½ medium avocado cubed
  • 1 ounce blueberries
Creamy Lemon Dressing:
  • 2 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • ½ medium lemon juice and zest
  • 1 teaspoon fresh garlic minced

Instructions

  1. Gather and prep all of your ingredients.
  2. Prepare the dressing by combining the mayonnaise, olive oil, garlic, and lemon juice and zest. Stir together well.
  3. Assemble the salad by layering the greens, salmon, and blueberries.
  4. Dress the salad and toss together.
