Keto Strawberry Cheesecake Popsicles

All the same amazing flavors of cheesecake join together in the cool, creamy and refreshing Strawberry Cheesecake Keto Popsicles. Crushed Keto Graham Crackers add classic cheesecake flavor and texture.

Ingredients

  • 2 cups fresh organic strawberries hulled and chopped
  • 1 ½ cups heavy whipping cream
  • 1 cup cream cheese
  • ½ cup allulose
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • Optional Keto Graham Crackers crushed

Instructions

  1. Add the strawberries to the bowl of a food processor and pulse a few times.  Scoop out ½ cup of the strawberries and set aside.  Add in the remaining ingredients and process until well combined.  
  2. Remove the blade and stir in the reserved ½ cup of strawberries.
  3. Pour the strawberry cream cheese mixture into silicone popsicle molds. Add some of the (optional) crushed graham crackers on top and press them in. Add the popsicle sticks in, cover and freeze at least 3 hours or overnight.

Notes

  • The Keto Graham Crackers are optional and are not included in the nutrition info.  If you decide to add them, which I highly recommend, be sure to adjust your macros accordingly.
  • The allulose in this recipe is recommended, since it prevents the popsicles from freezing rock hard. If you can't find allulose, you can use ⅓ cup of monk fruit instead.
