Ingredients
- 3 egg whites at room temperature
- ½ cup monk fruit/erythritol
- 1 ounce freeze dried strawberries ground to a powder
- ¼ teaspoon cream of tartar
Instructions
- Preheat oven to 250°F. In the clean and dry bowl of a stand mixer, add the egg whites and beat until you get soft peaks. Add in the cream of tartar and mix in the Swerve slowly, and continue beating until you have stiff peaks.
- Add in the ground freeze dried strawberries. Mix until well combined. If you don’t have a stand mixer, you can use a large clean and dry mixing bowl and a hand mixer.
- Scoop the batter using a cookie scoop (or two spoons) or add to a piping bag and pipe onto a baking sheet lined with a Silpat or parchment paper. I was able to get 36 cookies out of the batch.
- Bake for 40 minutes or until slightly golden. Leave in the oven for 1 hour, with the oven turned off and they will be slightly chewy on the inside. Leave in the oven for 2 hours and they will be crunchy all the way through.
- If they are still not crunchy in the center, turn the oven back on to 250°F, bake 5 minutes. Then turn the oven off and leave in the oven for an additional 30-45 minutes.
- Store at room temperature in an airtight container for 3-5 days.
Cup of Yum
Notes
- Makes 36 cookies total, serving size is 3 cookies
