Keto Strawberry Sauce

This keto strawberry sauce is so versatile! Pour it over low carb cakes and mousses or enjoy with pancakes or on parfaits. Only 3.9g net carbs for a generous portion and no thickeners needed.

Ingredients

  • 14 oz / 400g strawberries
  • 1 tablespoon lemon juice
  • 2 tbsp powdered sweetener

Instructions

  1. Hull and slice the strawberries. Blend to a smooth puree.
  2. Heat the strawberry puree in a saucepan over a low heat together with 1 tablespoon lemon juice and 2 tablespoon powdered sweetener. Reduce by at least half.
  3. Stir regularly, especially towards the end so the sauce does not stick to the bottom of the pan and burn. After 10-15 minutes the sauce should have reduced sufficiently and thickened. I ended up with 170 ml sauce (roughly ⅔ cup).

Notes

  • 9g net carbs per serve. 1 serving is 2 tbsp.
  • Makes 170ml (5.7 fl oz) of sauce = 12 tablespoon in total.  
  • Since we're reducing the sauce as much as possible, it's not necessary to add a thickener such as xanthan gum or ground chia seeds. 
  • Store in the fridge for up to 2 weeks or freeze for up to 3 months.
