Ingredients
- 14 oz / 400g strawberries
- 1 tablespoon lemon juice
- 2 tbsp powdered sweetener
Instructions
- Hull and slice the strawberries. Blend to a smooth puree.
- Heat the strawberry puree in a saucepan over a low heat together with 1 tablespoon lemon juice and 2 tablespoon powdered sweetener. Reduce by at least half.
- Stir regularly, especially towards the end so the sauce does not stick to the bottom of the pan and burn. After 10-15 minutes the sauce should have reduced sufficiently and thickened. I ended up with 170 ml sauce (roughly ⅔ cup).
Cup of Yum
Notes
- 9g net carbs per serve. 1 serving is 2 tbsp.
- Makes 170ml (5.7 fl oz) of sauce = 12 tablespoon in total.
- Since we're reducing the sauce as much as possible, it's not necessary to add a thickener such as xanthan gum or ground chia seeds.
- Store in the fridge for up to 2 weeks or freeze for up to 3 months.
