Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup butter melted, unsalted
  • 1 sweetened condensed milk 14-ounce can
  • 1/2 cup key lime juice
  • 1/2 teaspoon vanilla extract
  • 4 ounces cream cheese softened
  • 4 egg large yolks
  • Pinch kosher salt
  • 1 tablespoon lime zest
  • Whipped Cream for garnish (optional)

Instructions

  1. Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl.
  2. Press the mixture into a parchment-lined 8-inch square baking pan and bake at 350°F for 8-10 minutes.
  3. Whisk together sweetened condensed milk, key lime juice, vanilla extract, cream cheese, egg yolks, salt, and lime zest until smooth.
  4. Pour the filling over the baked crust and return to oven. Bake for 15-20 minutes at 350°F until the bars are mostly set with the center just barely jiggly.
  5. Allow the bars to cool at room temperature, then refrigerate for at least 3 hours before cutting into squares.
  6. Decorate the bars with whipped cream if desired.
