Key Lime Coconut Energy Bites
These Key Lime Coconut Energy Bites combine chopped almonds, cashews, and medjool dates with fresh key lime zest and juice for a zesty, chewy snack. Rolled in unsweetened coconut, they offer a refreshing twist to typical energy bites. The no-bake preparation makes them convenient for storing in the fridge for a quick energy boost or dessert alternative.
Ingredients
- 1/2 cup almonds
- 1/2 cup cashews
- 1 1/2 cups date pitted, medjool
- key lime zest and juice from 3 limes
- 1/2 cup unsweetened coconut
Instructions
- Add the almonds and cashews to the bowl of a food processor. Pulse until nuts are finely chopped (but do not pulse too long, you do not want the nuts to turn into a paste). Add the dates, lime juice and zest. Pulse until the dates are finely chopped and the mixture starts to clump. Shape the mixture into 1 1/2 inch balls. Roll in coconut to coat outside of the balls. Store in an airtight container in the refrigerator.
Notes
- Use any variety of pitted dates if medjool dates are unavailable; texture and sweetness may differ slightly.
- Store energy bites in an airtight container in the refrigerator to maintain freshness and firmness.
