Ingredients

For the Cookies:
  • 3/4 /4 cup butter at room temperature
  • 1/2 /2 cup cornstarch
  • 1/2 /2 cup confectioners sugar
  • 1 1/4 /4 cups all-purpose flour
  • 1 teaspoon key lime zest
  • 1 1/2 /2 tablespoons key lime juice
For the Frosting:
  • 3/4 /4 cup confectioners sugar
  • 1/4 /4 cup butter at room temperature
  • 1 teaspoon key lime zest
  • 1 tablespoon key lime juice

Instructions

  1. For the Cookies
  2. Cream butter, cornstarch, and confectioners sugar until well-combined, not fluffy, about 3 minutes on medium speed with an electric mixer.
  3. Add flour to the butter mixture just until well-combined.
  4. Add key lime zest and juice. Beat until mixed thoroughly and soft dough is formed.
  5. Divide dough into halves. Form each half into 1 inch roll.
  6. Wrap in waxed paper and refrigerate at least 1 hour or until firm.
  7. When ready to bake, preheat oven to 350 degrees.
  8. Slice dough into 1/4 inch slices. Place on cookie sheet lined with parchment paper and bake for 10 minutes or until set. Cookies will not brown.
  9. Cool completely.
  10. For the Frosting
  11. Cream butter and confectioners sugar. Add key lime zest and juice.
  12. Beat until fluffy.
  13. Spread frosting on tops of cookies.
