Ingredients
- 1 head cabbage finely chopped (about 8 cups)
- 1 carrot finely shredded and chopped (about 1/4 cup)
- ½ cup mayonnaise
- ⅓ cup granulated sugar
- ½ cup buttermilk
- 2 Tablespoons lemon juice
- 2 Tablespoons white vinegar
- ½ teaspoon kosher salt
- ⅛ teaspoon black pepper
- 2 Tablespoons minced onion
Instructions
- Chop and shred carrots and cabbage using a food processor, pulsing until they are about the size of rice. Do not OVER pulse. Pour into a large bowl. Set aside.
- In a small bowl, whisk together mayonnaise, sugar, buttermilk, lemon juice, vinegar, salt, pepper, and minced onion.
- Pour dressing over carrot and cabbage mixture. Cover and refrigerate for about 2 hours before serving.

Notes
- Serve cold. KFC coleslaw tastes best straight from the fridge!
- Don’t rush the marinating. Leaving the slaw in the fridge for at least 2 hours helps the flavors fully develop and combine.
- Storing. Store prepared KFC coleslaw in the fridge and enjoy within 2 days for best freshness.
- Serve on a bun with root beer pulled pork!
