KIELBASA POTATO SOUP

Ingredients

  • 1 lb kielbasa sausage sliced into ½-inch pieces
  • 4 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 ½ cups heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 1 cup shredded cheddar cheese optional for garnish
  • ½ cup sour cream optional for extra creaminess
  • Fresh parsley for garnish optional

  1. In a large pot, sauté the kielbasa slices over medium heat for 5-7 minutes, until they are browned and slightly crispy. Remove the kielbasa from the pot and set aside.
  2. In the same pot, add the chopped onion and cook for 3-4 minutes, until softened. Add the garlic and cook for an additional minute until fragrant.
  3. Add the diced potatoes to the pot, followed by the chicken broth, thyme, paprika, and salt and pepper. Bring to a boil.
  4. Reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  5. Once the potatoes are cooked, stir in the heavy cream and cooked kielbasa. Simmer for another 5 minutes to heat through.
  6. Taste and adjust the seasoning with more salt and pepper if needed.
  7. For extra creaminess, stir in the sour cream.
  8. Serve the soup hot, garnished with shredded cheddar cheese and fresh parsley, if desired.

Notes

  • You can use reduced-fat cream or half-and-half for a lighter version of the soup.
  • If you prefer a thicker soup, mash some of the potatoes in the soup with a potato masher or immersion blender.
  • This soup can be made ahead of time and stored in the fridge for up to 3 days. Reheat gently on the stove.
  • To make it even heartier, add vegetables like carrots or celery to the soup.
  • You can make this soup spicier by adding a pinch of cayenne pepper or red pepper flakes.
  • Kielbasa can be substituted with other sausages like smoked sausage or bratwurst for a different flavor.
