Ingredients
- 1 lb kielbasa sausage sliced into ½-inch pieces
- 4 medium potatoes peeled and diced
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups chicken broth
- 1 ½ cups heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- salt and pepper to taste
- 1 cup shredded cheddar cheese optional for garnish
- ½ cup sour cream optional for extra creaminess
- Fresh parsley for garnish optional
Instructions
- In a large pot, sauté the kielbasa slices over medium heat for 5-7 minutes, until they are browned and slightly crispy. Remove the kielbasa from the pot and set aside.
- In the same pot, add the chopped onion and cook for 3-4 minutes, until softened. Add the garlic and cook for an additional minute until fragrant.
- Add the diced potatoes to the pot, followed by the chicken broth, thyme, paprika, and salt and pepper. Bring to a boil.
- Reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.
- Once the potatoes are cooked, stir in the heavy cream and cooked kielbasa. Simmer for another 5 minutes to heat through.
- Taste and adjust the seasoning with more salt and pepper if needed.
- For extra creaminess, stir in the sour cream.
- Serve the soup hot, garnished with shredded cheddar cheese and fresh parsley, if desired.
