Kit Kat Cookie Bars

Ingredients

  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¾ cup  salted butter softened or 1 ½sticks
  • 1 ½ cups granulated sugar
  • 2 large eggs lightly beaten
  • 2 teaspoons vanilla extract
  • 4 45- gram Kit Kat packs or 15 12-gram treat-sized, roughly chopped

Instructions

  1. Line an 8x8 pan with parchment paper to leave at least 2 sides long to make it easy to remove later and preheat oven to 350F degrees.
  2. Whisk together all-purpose flour and baking powder and set aside.
  3. Cream together softened butter and sugar in a stand mixer (about 5 minutes) on low, with either the paddle attachment or dough hook.
  4. Pour in lightly beaten eggs (just enough to break the yolks) and vanilla and run the machine on low for 1 minute.
  5. Add in dry ingredients and run again for about 2 minutes to thoroughly mix.
  6. Add in chopped kit kat bars and mix with a spoon or spatula. Mixing in half at a time will help to make sure they are evenly distributed. Note: You can reserve a couple or have additional on hand and drop as you need empty areas.
  7. The dough will be sticky. Drop dollops around the prepared 8x8 pan and use a spatula or the back of a spoon to smooth it out as best you can.
  8. Bake for 50-55 minutes, or until a toothpick comes up clean but with some moist crumbs from the center of the pan.
  9. Cool on a wire rack fully before taking cookies out of the pan.

Notes

  •  
  • To ensure even distribution of KitKat chocolate bar pieces inside your cookie bars, chop your Kit Kats into similarly sized pieces.
  • To avoid having your cookie bars stick to the pan, line your baking dish with parchment paper and cooking spray which also makes clean-up super easy.
  • Overmixing your dough can cause your cookie bars to be dense and tough so as soon as your dough is blended, stop mixing and gently fold in the Kit Kat pieces.
  • Keep an eye on your cookie bars to avoid over-baking and insert toothpick in center until it comes out basically clean with maybe a few crumbs.
