Ingredients

  • 1 lb beef (tenderloin or sirloin)
  • ½ cup niter kibbeh (Ethiopian spicy clarified butter), melted and at room temperature
  • 1 teaspoon mitmita
  • salt
Equipment
  • Large cutting board
  • Meat grinder
  • Very sharp knife

Instructions

    Cup of Yum
  1. Using a sharp knife, cut the excess fat from the meat, and discard.
  2. Finely chop the meat (with a mincer and not with a blender), and place it into a large bowl.
  3. Salt the meat, then add the melted niter kibbeh and mitmita, and mix well.
  4. Serve with injera.

Notes

  • It is possible to keep leftover kitfo overnight, in an airtight container in the refrigerator. The next day, either sauté or heat over very low heat for a few minutes, stirring constantly, until the butter melts, and the temperature of the meat approaches room temperature. Serve immediately.
