Kodiak Birthday Cake Protein Donuts

These healthy Birthday Cake Protein Donuts are so easy to make using my favorite Kodiak Cake mix! The perfect sweet breakfast, snack or dessert and ready in just 20 minutes! Each donut is less than 150 calories and packs over 6 grams of protein each!

Ingredients

  • 1 cup birthday cake baking mix (160g) - I used Kodiak. Can use any box cake mix
  • 1/4 cup cake pop or vanilla protein powder (30g) - I used PEScience
  • 3/4 cup unsweetened almond milk (180g) or milk of choice
  • 3 Tbsp egg whites (45g)
  • 1 Tbsp coconut oil, melted (15g)
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract or 1/2 tsp cake batter extract
  • 9 Tbsp whipped vanilla frosting* see notes - I used Betty Crocker
  • 2 Tbsp Rainbow sprinkles

Instructions

  1. Preheat the oven to 350 degrees F. Spray 9-donut cavities with cooking spray.
  2. Mix together the kodiak mix and protein powder in a bowl.
  3. Then whisk in the milk, egg whites, melted coconut oil, vanilla and almond extract.
  4. Pour into the donut pans.
  5. Bake for 10 minutes, or until a toothpick inserted comes out clean. Let sit in the pan for 1-2 minutes then transfer to a wire rack to finish cooling. Let cool completely before adding frosting (so it doesn't melt off!)
  6. Once cooled, spread 1 tablespoon of frosting onto each donut then sprinkle the donuts with sprinkles. Let donuts chill until ready to enjoy (they’re better the longer they’re in the fridge!)

  • To make gluten-free: use a gluten-free baking mix.

  • To make vegan/dairy-free: use a vegan baking mix and just make sure you use dairy-free sprinkles and frosting (Betty Crocker whipped frostings are all dairy-free with the exception of their whipped cream cheese frosting).

  • 3-oz. cream cheese - fat-free / reduced-fat / regular 
  • 1/4 cup plain nonfat Greek yogurt (60g)
  • 2 Tbsp vanilla protein powder (15g) - can omit 
  • 1/2 Tbsp sugar free jello pudding mix - cheesecake, vanilla or white chocolate all work good 
  • 1 Tbsp sweetener, more to taste 
  • 1-3 Tbsp unsweetened almond milk, plus more for thinner frosting 
  • 2 Tbsp confectioner’s sugar (regular or sugar alternative) 
  • 1 Tbsp cold water
