Ingredients

  • 4 cups flour sifted
  • 1½ cup vergeoise brown sugar
  • 1 cup unsalted butter soft
  • 1 egg
  • 4 tablespoons milk
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon white pepper
  • ¼ teaspoon ground anise
  • ¼ teaspoon salt

Instructions

  1. In the bowl of a stand mixer, whisk the butter, sugar, salt and spices.
  2. Add the egg and milk and mix with the flat beater.
  3. Gradually add the flour mixed with the baking powder until obtaining a homogeneous dough. Do not knead the dough too long.
  4. Wrap the dough with plastic wrap and refrigerate for 1 hour.
  5. Preheat the oven to 375 F (190°C).
  6. Cut the dough into 4 equal pieces and form 4 long rolls of ½ inch (1 cm) thick.
  7. Cut the rolls into ½ inch (1 cm) pieces and roll each into balls.
  8. Place the balls on a baking sheet lined with parchment paper and flatten them very slightly.
  9. Bake for about 15 minutes until they turn light brown.
  10. Remove from oven and let cool completely on a cooling rack.
