Kultyas

Kultyas or ginisang kamatis is a delicious and nutritious side dish the whole family will love. Enjoy for breakfast with sinangag and tuyo or for lunch with steamed rice and fried bangus.

Ingredients

  • 2 tablespoons oil
  • 1 onion, peeled and chopped
  • 6 cloves garlic, peeled and minced
  • 10 large very ripe Roma tomatoes, chopped (about 4 cups)
  • 1 packet (8 gms) Maggi Magic Sarap
  • pepper to taste
  • 3 eggs, well beaten

Instructions

  1. In a wide pan, heat oil over medium heat. Add onions and garlic and cook until softened.
  2. Add tomatoes and cook, mashing with the back of the spoon. Cover and continue to cook, stirring occasionally, until very soft and release juices.
  3. Season with Maggi Magic Sarap and pepper to taste.
  4. Add beaten eggs in a slow stream, stirring regularly to scramble. Cook until eggs are set.

Notes

  • If you want the beaten eggs well distributed in the tomato mixture, you can stir immediately and continuously when pouring them in. If you prefer larger curds, give the eggs a few seconds to set before mixing.
