Kumara Chips

Kumara chips are deliciously crispy sweet potato fries, which are popular under their name of Maori origin in New Zealand.

Ingredients

  • 3 sweet potatoes
  • 2 tablespoons olive oil
  • salt

Instructions

  1. Rub the sweet potatoes to remove any dirt, then cut them into thin sticks of the same size, no thicker than a quarter of an inch.
  2. Then place them in a large bowl and cover with cold water.
  3. Let them sit in cold water for an hour. Change the water twice to remove any excess starch.
  4. Preheat the oven to 430°F / 220°C.
  5. Drain the sweet potato sticks and dry them completely in a clean cloth.
  6. Transfer the sweet potatoes to a large baking dish and coat them by hand with olive oil.
  7. Make sure the sweet potato sticks are evenly distributed on the baking sheet in a single layer, without overlapping.
  8. Cook in the center of the oven for about 40 minutes, turning them halfway through cooking to ensure that all sides are cooked evenly.
  9. Once the sweet potato fries are cooked, turn off the oven and leave them inside for another 5 to 10 minutes.
  10. Season with salt and serve hot.
