Kuri Gohan 栗ご飯

Kuri Gohan is a traditional Japanese rice dish combining chestnuts with short grain rice and glutinous wheat. The chestnuts are simmered and peeled before cooking together with the rice, sake, and salt in a rice cooker. The result is a tender, subtly sweet dish where chestnuts add a nutty, soft texture complementing the slightly sticky rice mixture. A sprinkle of black sesame seeds provides a final touch.

Ingredients

  • 500 g chestnut
  • 1 3/4 cups short grain rice
  • 1/4 cup glutinous wheat or sweet rice
  • 2 cups water
  • 1 tsp salt
  • 1 tbsp sake
  • 1 tsp black sesame seeds

Instructions

  1. Prepare chestnuts by using kitchen scissors to remove the outer hard skin. Leave the astringent skin intact. 
  2. Place them in a saucepan or pot and pour enough water to cover the chestnuts.
  3. Start to heat the pot over high heat to bring it to boil. 
  4. Once it has boiled, turn the heat down to low / medium and simmer to cook the chestnuts for about 20 minutes. 
  5. Drain the hot water and add cold water so that you can handle the chestnuts but the chestnuts will not get dry. 
  6. Carefully remove the astringent skin with hands and set aside all. 
  7. Wash the rice and glutinous wheat until the washing water becomes clearer (about 3-4 times).  Drain the water completely.
  8. Place the washed rice and the glutinous wheat into a rice cooker. 
  9. Pour 2 cups of water and add salt and sake. 
  10. Place the chestnuts over the rice. 
  11. Close the rice cooker lid and set the rice cooker, following the rice cooker instructions. 
  12. When it is cooked, stir gently. Try not to break the chestnuts shape. 
  13. Serve in a rice bowl and sprinkle black sesame seeds.

Notes

  • Glutinous wheat contributes a mochi-like texture; sweet rice can be used as a substitute.
  • If neither glutinous wheat nor sweet rice is available, cooking with rice only is acceptable, but texture will differ.
  • Rice cooker models affect cooking time; follow your rice cooker's instructions closely.
