Ingredients

  • 4 Cups chicken or vegetable stock homemade or store bought
  • 2 Cups baby spinach washed
  • 4 eggs
  • Parmesan Cheese grated to taste
  • salt and pepper

Instructions

    Cup of Yum
  1. Crack eggs in a bowl and whisk until combined
  2. Simmer the stock on Medium Low heat
  3. Add the eggs slowly and mix
  4. Let it cook for 1-2 minutes
  5. Add the spinach and mix until the spinach wilts
  6. Grate fresh parmesan cheese on top
  7. Test for seasoning and make the necessary adjustments
  8. Enjoy
