Ingredients

  • 3 egg
  • 100 g caster sugar
  • 1 tsp vanilla extract
  • 100 g plain flour
  • salt
  • icing sugar

Instructions

  1. Preheat your oven to 180°C (160°C fan). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, crack the eggs and add the caster sugar. Whisk them together until the mixture becomes pale and fluffy.
  3. Stir in the vanilla extract.
  4. Sift the plain flour and a pinch of salt into the egg mixture. Gently fold the flour into the eggs until well combined. Be careful not to overmix; you want a light and airy batter.
  5. Transfer the batter to a piping bag fitted with a plain round tip (about 1.5 cm in diameter).
  6. Pipe the batter onto the prepared baking sheets in finger-like shapes, each about 7-8 cm long. Leave some space between each ladyfinger.
  7. Bake in the preheated oven for 12-15 minutes or until the ladyfingers are golden and firm to the touch.
  8. Remove them from the oven and let them cool on a wire rack.
  9. Once cooled, you can dust the ladyfingers with icing sugar if desired.
  10. Your homemade ladyfingers are ready to enjoy on their own or use in various dessert recipes like Tiramisu!
