Lao Papaya Salad Recipe (Thum Mak Hoong)

Ingredients

  • 1 clove garlic
  • 2 dried chilies add to taste
  • 2 Chilies add to taste
  • 1 teaspoon shrimp paste
  • 1/2 tablespoon palm sugar
  • 1/2 teaspoon MSG
  • 1/2 lime
  • 1.5 tablespoon tamarind paste
  • 1 tablespoon fish sauce
  • 2.5 tablespoons fermented fish sauce
  • 7 ounces green papaya shredded
  • 0.7 ounces yard long beans
  • 4 small tomatoes

Instructions

  1. Pound garlic and chilies with a mortar and pestle.
  2. Pound in the shrimp paste, palm sugar, and MSG.
  3. Mix in the dressing sauces: fish sauce, fermented fish sauce, lime juice, and tamarind paste.
  4. Toss in sliced yard-long beans and shredded green papaya. Pound to mix and lightly bruise the beans.
  5. Lastly, add sliced tomatoes and mix everything one last time. Serve immediately with sticky rice.
