Lasagna Soup

Ingredients

  • 6 ounces lasagna noodles broken into pieces, can use 6-8 ounces
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • ¼ cup onion diced
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon Italian seasoning
  • 3 cups marinara sauce 24 ounces
  • 3 cups chicken broth low sodium, 24 ounces
  • 1/2 cup mozzarella cheese shredded, 2 ounces
  • 1/2 cup Parmesan Cheese shredded, 2 ounces
  • basil optional for garnish, fresh

Instructions

  1. Fill a large pot with water and a sprinkle of salt. Bring the water to a boil over high heat. Break the lasagna noodles into 1-2 inch pieces with your hands. Add the noodles to the boiling water and cook until al dente according to the package directions, usually 8-9 minutes. Drain noodles and set to the side.
  2. Place a tablespoon of olive oil in a second large pot or dutch oven to warm over medium heat. Add onion and ground beef to the pot. Cook breaking up the ground beef with a wooden spoon until brown and no longer pink, about 7-10 minutes. Drain any additional grease from the pan.
  3. Add in garlic, salt, and Italian seasoning to the ground beef mixture. Cook one minute over medium heat, until fragrant.
  4. Pour marinara sauce and chicken broth in with the ground beef mixture. Stir continuously, and bring to a boil. Then reduce the heat to medium-low to a simmer for 5 minutes.
  5. Place noodles in individual bowls and ladle soup over noodles. Top with mozzarella cheese, parmesan cheese, and basil (optional). Serve and enjoy.

Notes

  • Garlic powder can replace fresh garlic; use 3/4 teaspoon as a substitute for 3 cloves.
  • If using jarred minced garlic, 1 1/2 teaspoons is appropriate to match fresh garlic flavor.
  • Lasagna noodles can be broken into 1-2 inch pieces and cooked separately before adding to the soup.
