Lavender Banana Bread

This lavender banana bread is a fresh, modern spring spin on the classic! The light flavor of lavender gives this banana bread a whimsical twist.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted and cooled
  • ¾ cup brown sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • ¼ teaspoon lavender extract
  • 4 medium ripe bananas, mashed
lavender glaze
  • 1 1/4 cups of powdered sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon lavender extract
  • 2 tablespoons heavy cream
  • 2 1/2 tablespoons milk
  • a drop of light pink or purple food coloring
  • optional: culinary lavender flowers

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 6-cup loaf pan with nonstick baking spray.
  2. In a small bowl, whisk together the flour, baking soda and salt.
  3. In a large bowl whisk together the melted butter and sugar. Whisk in the eggs, vanilla extract and lavender extract. Whisk in the mashed bananas.
  4. Stir the dry ingredients in the wet ingredients until just combined. Do not over mix!
  5. Pour the batter into the greased loaf pan. Bake for 55 to 60 minutes, until the top is golden and set and a tested inserted in the center comes back clean. Let the bread cool in the pan for 15 minutes, then carefully invert it and place the bread on a sheet of parchment paper.
lavender glaze
  1. To make the lavender glaze, whisk all ingredients together until smooth. If it seems to thick, add in more milk 1 teaspoon at a time. If desired, you can add a drop of food coloring to make it pink!
  2. Optional: sprinkle a teaspoon of culinary lavender over top of the glaze.
