Lavender Chicken Salad Sandwiches
Classic chicken salad gets an update! Lemon zest and fragrant lavender give the classic sandwich a modern twist and low-fat mayo and Greek yogurt transform it into something super healthy.

Ingredients
- 1 3/4 lb. chicken breast
- 2 tsp olive oil
- 1/4 cup low-fat mayo
- 1/2 cup plain greek yogurt
- 3/4 tsp salt
- 1 1/2 tsp lemon zest
- 1 1/2 tsp lavender
- 1/2 cup finely chopped celery
- 1/3 cup finely chopped red onion
- 1/2 cup cashews chopped
- 1/4 cup chopped chives
- 6 croissants
Instructions
- Preheat oven to 350 degrees.
- Rub chicken breasts with olive oil. Season with a little bit of salt and pepper. Bake for 25-30 minutes until cooked through and juice run clear. Cool to room temperature and then shred. (Can be made one day in advance)
- In a medium bowl, whisk mayo, yogurt, salt and lemon zest. Before adding the lavender, crush between your finger and then add to the bowl. Whisk to combine.
- Add cooled, shredded chicken, celery, red onion, cashews and chives. Toss until combined. Season to taste with salt and pepper.
- Evenly divide between six croissants or whole-grain bread. If desired serve with a bit more lavender and some peppery arugula.
