Lefse

Lefse is a traditional Norwegian soft flatbread, made with potatoes, milk or cream, and flour, which is baked on a hot plate. It is also found in Sweden where it is called läfsa or löfsa.

Ingredients

  • 1 lb potato starchy), peeled
  • 1½ cup all-purpose flour
  • 6 tablespoons butter
  • ¼ cup heavy cream
  • 2 tablespoons milk
  • ½ teaspoon salt

Instructions

  1. Boil the potatoes until tender, then drain them.
  2. Mash the potatoes with a potato masher.
  3. Add the butter and mix well. Add salt and cream and mix well.
  4. Place the mixture in a container, cover with plastic wrap and let it rest in the refrigerator for 12 hours.
  5. Add the flour to the cooled dough and mix well.
  6. Knead for 5 minutes to incorporate the flour.
  7. Divide the dough into 8 pieces and form balls with them.
  8. Sprinkle flour on a work surface and, using a rolling pin, roll out each ball of dough into a disc about 10 to 12 inches (25 to 30 cm) in diameter. To facilitate rolling, it is possible to place the ball of dough between two sheets of wax paper to spread it out.
  9. Use the rolling pin to transfer the dough disc to a medium hot pan and cook each lefse for about 1 minute to 2 minutes.
  10. Flip the lefse using wooden or silicone tongs and cook until brown spots are visible on the underside.
  11. Transfer to a dish.
  12. Cook the remaining dough balls.
