Leftover ham breakfast sandwich

This ham breakfast sandwich with egg and cheese is a great way to use Christmas leftovers and the perfect day-after-Christmas breakfast.

Ingredients

  • 4 eggs
  • 2 tbsp milk
  • 1 tbsp chopped chives
  • 1 tsp salt
  • ½ tsp pepper
  • 2 English muffins
  • 2 lices leftover ham
  • 2-4 lices cheese

Instructions

  1. Whisk the eggs with the milk, salt and pepper.
  2. Heat a large, non-stick pan over medium heat then add oil or butter. Pour in the eggs and add the chives.
  3. Cover with a lid and cook until set. Once cooked, remove from the pan.
  4. Cut in half to serve two people.
  5. Toast the English muffins in a hot pan until golden then add warmed sliced leftover ham, cheese and egg. Serve immediately.
