Leftover Potato Hash and Corned Beef Recipe

A simple and easy way to turn leftover baked potatoes to the most amazing meal!

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 2 leftover potatoes cut into small cubes
  • 1 can corned beef
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. Heat the oil in a large skillet over medium-high heat.
  2. Saute onions for about 5-7 minutes until they are slightly browned.
  3. Add leftover potatoes and corned beef.
  4. Season with salt and pepper. Saute until cooked through. Serve and enjoy!
