Ingredients

  • 6 cups red potatoes diced
  • 1 white onion cut in chunks, large
  • 2 tablespoons olive oil
  • 2 cups prime rib thinly sliced
  • 1/3 cup beef broth
  • 1-2 teaspoons Worcestershire sauce
  • salt to taste
  • black pepper to taste

Instructions

    Cup of Yum
  1. In a large skillet, fry the potatoes and onions in the olive oil until the potatoes and onions are cooked.
  2. Add in the prime rib.
  3. Whisk the beef broth and Worcestershire sauce together, then sprinkle over the skillet.
  4. Fry 1-2 minutes, until the prime rib is heated.
  5. Serve as-is or with poached eggs on top.
