Leftover Rice: Chocolate Peanut Butter Mug Cake for One

In 5 minutes you can be eating have this chocolate and peanut pudding . Make it with some kind of sugar substitute if you like. Make it in a mug or a small bowl. i liked the mug the best.

Ingredients

  • 30 gm rice 1/4 cup, cooked
  • 1 tablespoon cocoa powder
  • 1/8 teaspoon baking powder
  • 1 tablespoon peanut butter or other nut butter - I like crunchy peanut butter
  • 1 tablespoon gluten free flour or almond meal
  • 20 ml neutral cooking oil 1 Tablespoon, generic cooking oil
  • 1 whole egg
  • 3 tablespoons brown sugar

Instructions

  1. Run a knife through the rice grains to break them up a bit before tipping into your mug.
  2. Add the cocoa, sugar, baking powder and gluten free flour ( or almond meal) and stir well
  3. Add the egg and oil and peanut butter and stir very well
  4. Pop into a microwave ( mine is 1200 Watts) for a minute for a nice sticky pudding. Don't cook any longer than 40 seconds for a powerful microwave.
  5. Eat with cream , yoghurt or Ice cream
