Leftover Roast Beef Sandwich
Leftover Roast Beef Sandwich with arugula salad (rocket salad), horseradish sauce, picked beetroot and a thin coating of mayo spread on crusty sourdough bread, a fantastic way of using up any leftover beef you may have from your Sunday dinner or any other celebration. Super quick and easy to make, this sandwich is so delicious!
Ingredients
- 2 lices sourdough bread
- 2 lices roast beef leftover
- 1 teaspoon mayonnaise
- 1 teaspoon horseradish sauce
- 4 lices beetroot pickled
- ½ cup arugula rocket salad, for salad
Instructions
- Spread the mayo on one side of a bread slice.
- Arrange the pickled beetroot slices, beef slices, arugula salad and drizzle the horseradish sauce over.
- Top with the remaining bread slice, and enjoy!
