Lemon Basil Chicken

Ingredients

  • 300 g chicken breast
  • 2 tablespoon olive oil
  • 1 lemon (juice and zest only)
  • 3 garlic clove crushed
  • 8 tablespoon fresh basil chopped
  • 1 Pinch sea salt and ground black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 200°C/400°F/Gas 6.
  2. Put the chicken into a dish and cover with the rest of the ingredients.
  3. Mix well and marinade overnight (or for at least 4 hours)
  4. Put the marinated chicken into an oven proof dish cook for 30 minutes, or until the chicken is cooked through.

Notes

  • Pound the chicken before marinating it. This will help it all be an even size and then it will cook at the same rate.
  • To marinate the chicken, put it in a zip-lock bag, or a bowl with clingfilm on it.
  • After the chicken has marinated, discard the marinade and then cook the chicken.
