Lemon Basil Roasted Mushrooms Recipe

Mushrooms are fantastic any old way, but roasted mushrooms are absolutely heavenly. Toss them with lemon juice and basil for a bright, healthy side dish.

Ingredients

  • 1 pound crimini mushrooms
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 garlic cloves chopped
  • juice of ½ small lemon
  • 1 tablespoon minced flat leaf parsley
  • 5 basil leaves thinly sliced

Instructions

  1. Preheat oven to 450 degrees F. Coat a baking sheet with cooking spray.
  2. Cut large mushrooms into quarters, medium sized mushroom in half and leave small mushrooms whole.
  3. In a bowl, toss the mushrooms with olive, salt and pepper. Transfer to the prepared baking sheet.
  4. Roasted the mushrooms for 10 minutes. Add the garlic and stir to combine.
  5. Roast until the mushrooms are tender and starting to brown, 7 to 10 minutes.
  6. Transfer to a bowl, and toss with the lemon juice, parsley and basil. Serve.
