Lemon Butter Grilled Shrimp

The most succulent grilled shrimp, brushed with lemon butter and ready to eat straight from the skewer! Serve them as an appetizer, or in pasta or a salad.

Ingredients

  • 1 pound large shrimp about 30, peeled & deveined, tails intact
  • 1 ½ teaspoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 teaspoons unsalted butter melted
  • Juice of ½ lemon
  • 1 tablespoons minced flat leaf parsley optional

  1. If using wooden skewers, soak in warm water for 45 to 60 minutes.
  2. Pat shrimp dry with paper towels. Arrange the shrimp on a rack set over a baking sheet and place in the refrigerator, uncovered, for 1 hour to allow the shrimp to dry completely. (This step is optional, but produces a great pop of flavor and moisture to the cooked shrimp.)
  3. Preheat the grill to high heat.
  4. In a medium bowl, toss the shrimp with the olive oil, salt and pepper. Thread the shrimp onto wooden or metal skewers, poking the skewers through both the head and tail of each shrimp.
  5. Grill the shrimp until just cooked through, about 1 minute per side. Do not overcook!
  6. In a small bowl, combine the melted butter and lemon juice. Brush over the shrimp.
  7. Garnish with parsley, if desired. Serve.
