Lemon Chicken Orzo Soup
Lemon Chicken Orzo Soup is a comforting, creamy soup combining sauteed vegetables, tender shredded chicken, and orzo pasta in a lemon-infused broth enriched with Parmesan cheese and heavy cream. The bright acidity of lemon balances the richness of the cream and cheese, while orzo adds a delicate, tender bite that thickens the soup slightly, making it wholesome and satisfying.
Ingredients
- 3 Tablespoons butter salted
- 1 medium onion (diced)
- 2 carrot diced
- 2 celery (chopped)
- 3 garlic finely diced, cloves
- 6 to 8 cups chicken broth
- 1 cup orzo pasta
- 2 to 3 cups chicken breast from rotisserie chicken, shredded, cooked
- 3 to 4 Tablespoons lemon juice fresh
- 1/2 cup heavy cream
- 1/2 to 3/4 cup Parmesan Cheese shredded
- 1 teaspoon salt
- 1 teaspoon black pepper
- Italian parsley diced, fresh
Instructions
- Heat a large pot over medium heat. Melt butter. Add onions, carrots, and celery and saute for 7-8 minutes, until softened. Add garlic and cook for 1 minute.
- Add orzo and stir to coat with vegetables, about 1 minute. Add 6 cups of chicken broth and stir. Cook for 9-13 minutes or until the orzo is cooked and plump.
- Stir in chicken, fresh lemon juice, heavy cream, parmesan cheese, and salt and pepper. Let the soup heat up and thicken. If you want a thinner soup, you may add more chicken broth. The orzo pasta will soak up the chicken broth so you may need to add more in time.
- Taste for seasonings. If you want extra lemon flavor, add fresh lemon zest. Sprinkle with fresh Italian parsley and any extra freshly grated parmesan cheese.
