Lemon Chicken Orzo Soup

Ingredients

  • 1 tablespoon olive oil
  • 1/2 yellow or white onion diced
  • 3 carrots diced
  • 3 stalks celery diced
  • Salt and freshly ground black pepper to taste
  • 3 cloves garlic grated or minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon all purpose flour
  • 6 cups low sodium chicken broth
  • 1 cup uncooked orzo
  • 3 cups shredded cooked chicken breasts
  • 2 tablespoons chopped fresh dill
  • 1/4 cup fresh lemon juice 1 lemon

  1. Heat a tablespoon of olive oil in a large pot over medium-high heat. Sauté the onion, celery, and carrots until they’re tender, 6-7 minutes. Season with salt and pepper.
  2. When the veggies are tender, add in the garlic, Italian seasoning, and flour. Stir until you can no longer see the flour and cook for another minute.
  3. Pour in the chicken broth and stir everything together. Bring the soup to a boil and add in the orzo. Stir and reduce the heat to medium. Cook the orzo until it's al dente stirring often to prevent it from sticking to the bottom of the pot.
  4. Stir in the shredded chicken, lemon juice, and dill. Taste for seasoning and serve.
