Ingredients

  • ½ tsp ground ginger
  • ¼ tsp ground cumin
  • ¼ tsp paprika
  • 1 tsp cinnamon
  • 1 pinch saffron infused in 1-2 tbsp water
  • salt & pepper to taste
  • 1 whole chicken cut up
  • ¼ cup extra virgin olive oil
  • 2 medium onions thinly sliced
  • 1 garlic clove minced
  • 1 bunch parsley minced (approximately ¾ cup)
  • 1 bunch cilantro/coriander minced (approximately ¾ cup)
  • 3 ½ cups chicken broth
  • ½ lemon thinly sliced
  • 1 cup green or black olives pitted
