Ingredients

The Chicken:
  • Juice of ½ lemon
  • 1 tablespoon olive oil
  • ½ cup plain nonfat Greek yogurt
  • 1 ¼ teaspoons Mediterranean sea salt see below
  • 1 ½ pounds chicken tenders
Mediterranean sea salt (makes 3 ½ tablespoon salt blend):
  • 1 tablespoon dried oregano
  • 1 ½ teaspoons garlic powder
  • 1 teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon dried basil
  • ½ teaspoon lemon pepper

Instructions

The Chicken:
    Cup of Yum
  1. In a bowl, combine the lemon juice, yogurt and 1 ½ teaspoons of the Mediterranean sea salt, and stir to combine. Add the chicken and stir to coat the chicken in the marinade. Cover and refrigerate.
  2. Let the chicken marinate for 20 minutes, or up to an hour.
  3. Heat a large nonstick skillet over high heat for 1 minute. Add the chicken tenders, gently shaking off any excess marinade as you put them in the pan. Discard the remaining marinade.
  4. Cook for 3 minutes. Drain off any liquid and continue to cook for another 3 minutes. Flip and cook for an additional 3 minutes, or until the chicken is cooked.
  5. Remove from the heat. Serve.
Mediterranean Sea Salt:
  1. Combine all of the ingredients in a small bowl and stir to combine.
