Lemon Crinkle Cookies
If you are looking for a light and delicious dessert, these Lemon Crinkle Cookies are perfect. They have the right amount of lemon flavor without being overly tart or sweet. Plus, the cake mix makes them incredibly fluffy and cuts down on prep!
Ingredients
- 1 box lemon cake mix (15.25 ounces)
- 6 tablespoons butter melted, unsalted
- 2 egg
- 2 tablespoons lemon juice
- 1/2 cup powdered sugar
Instructions
- Prepare a baking sheet with parchment paper and preheat the oven to 350° F.
- Combine cake mix, butter, eggs and lemon juice together in a medium sized mixing bowl.
- Once the batter is mixed well, use a two tablespoon cookie scoop to create the cookie dough balls.
- Roll each ball in the powdered sugar and coat generously.
- Place the cookie dough balls on the prepared baking sheet about 1 1/2" apart.
- Bake for 11 minutes.
- Let the cookies cool for 7 minutes on the baking sheet before transferring to a cooling rack.
