Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 pinch kosher salt
  • 3/4 cup vegetable oil
  • 2 egg room temperature, large
  • 1/2 cup Greek yogurt room temperature
  • 1/4 cup milk warm, whole
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice fresh
  • 1 cup granulated sugar
  • frosting for decorating, of choice

Instructions

  1. Preheat oven to 375°F. Line a cupcake tin with paper liners.
  2. Sift together flour, baking soda, baking powder, and salt in a large bowl.
  3. In a separate bowl, whisk together oil, eggs, yogurt, milk, zest, lemon juice, and sugar until smooth.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. Fill cupcake liners 3/4 full and bake for 13-17 minutes or until a toothpick inserted comes out clean. Once cool, decorate with preferred frosting.
