Lemon-Dill Rice

Ingredients

  • 2 tsp butter or olive oil
  • 1 small shallot diced
  • 2 cloves of garlic minced
  • ¾ cup rice rinsed
  • 2 tbsp fresh lemon juice
  • 1 ½ cups vegetable or chicken broth minus two tablespoons
  • 1-2 tbsp fresh dill to taste
  • ½ tsp lemon zest

Instructions

  1. Heat the olive oil in a large saucepan over medium heat. Add the chopped shallot and cook, stirring constantly for 1 minute.
  2. Add the minced garlic and cook, stirring constantly, for 1 minute.
  3. Add the rice and cook, stirring often so the rice doesn’t stick to the pan, for 3-4 minutes.
  4. Add the lemon juice and chicken broth then season with sea salt, to taste. Bring to a boil then reduce heat to medium-low. Cover and let cook for 20 minutes.
  5. Remove the rice from the burner without removing the lid and let it sit for 5 minutes.
  6. Carefully remove the lid and fluff the rice with a fork. Sprinkle with chopped dill and lemon zest. Serve. Enjoy.
