Lemon Feta Dressing

Ingredients

  • 200 grams feta cheese 7 oz broken into small pieces
  • 60 grams cream cheese 2 oz or ½ cup
  • 30 grams parsley ¼ cup, fresh
  • 15 grams mint ⅛ cup, fresh
  • 2 tablespoons olive oil
  • 1 large clove garlic
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper freshly ground

Instructions

  1. Blend together 200 grams feta cheese, 60 grams cream cheese, 30 grams fresh parsley , 15 grams fresh mint, 2 tablespoons olive oil, 1 large clove garlic, 1 tablespoon lemon juice, ½ teaspoon salt¼ teaspoon black pepper, scraping down the sides till smooth and fluffy. Taste to adjust for seasoning.
  2. Transfer to and airtight container and chill for at least 30 minutes. Serve as a dip or drizzle over fresh tomatoes, grilled meats or vegetables.

Notes

  • Break feta cheese into small pieces before blending to ensure smooth texture.
  • Mince garlic finely for even distribution throughout the dressing.
  • Chill the dressing for at least 30 minutes to allow flavors to blend and texture to improve.
  • Use as a dip, dressing over grilled vegetables or meats, in soups, or as a spread on bread and sandwiches.
  • Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 1 month.
  • To use frozen dressing, thaw in the fridge and let sit at room temperature for about 30 minutes before serving.
  • For a more intense feta flavor in dressing form, blend in 1-2 tablespoons of feta brine but adjust salt accordingly due to increased saltiness.
