Lemon Meringue Pie

You will want to make this refreshing lemon meringue pie loaded with rich lemon flavor on a slightly sweet graham cracker crust.

Ingredients

For the Pie
  • 8 oz package sugar-free cook and serve vanilla pudding
  • 3 oz package sugar-free lemon gelatin
  • 2 ⅓ cups water
  • ⅓ cup lemon juice
  • 1 ready to use graham cracker crust or you can make your own
For the Meringue
  • 3 egg whites
  • 3 Tablespoons granulated sugar
  • A few dashes cream of tartar

Instructions

For the Pie
    Cup of Yum
  1. Combine the pudding and gelatin mixes in a small saucepan
  2. Add the water and lemon juice and stir until combined
  3. Cook over medium heat until mixture comes to a boil, stirring occasionally
  4. Cook and stir 3 minutes longer
  5. Remove from heat
  6. Allow to cool about 10 minutes
  7. Pour into graham cracker pie shell
  8. Cover with plastic wrap and refrigerate until set, about 4 hours
For the Meringue
  1. Beat egg whites until frothy
  2. Add sugar and cream of tartar
  3. Beat until stiff peaks form
  4. Top pie with meringue
  5. Using a butane torch, carefully brown the top of the pie
  6. Refrigerate until ready to serve
