Ingredients
- 2 tbsp Dijon mustard
- Zest and Juice from 1 lemon
- 1 tbsp olive oil
- 1 clove of garlic minced
- 2-3 tsp fresh thyme leaves
- 1-2 tsp honey to taste
- Sea Salt and Freshly Cracked Pepper to taste
Instructions
- Combine the Djon mustard, lemon zest, lemon juice, olive oil, minced garlic, fresh thyme, and honey together in a small bowl.
- Slather the drumsticks evenly with the marinade then season both sides well with sea salt and freshly cracked pepper, to taste then place into a baking dish that has been coated with cooking spray. Place into the refrigerator to marinate for 2 hours.
- Remove from the refrigerator 20 minutes before baking.
- Preheat the oven to 400 degrees.
- Place the chicken into the oven and bake for 40 minutes or until the chicken is cooked through. Side Note: If the chicken skin is not browned to your liking, turn the oven to broil and cook, WATCHING VERY CAREFULLY, until it's golden brown. Let the chicken rest for 5 minutes before serving. Enjoy.
