Ingredients

  • 16 ounces orzo pasta cooked according to package instructions and cooled
  • 1 large cucumber deseeded and diced
  • 1/2 red onion diced
  • 1 cup feta cheese crumbled
  • 3 tablespoons dill chopped, fresh
  • 1/2 cup pistachio chopped
  • 15.5 ounces chickpeas rinsed and drained
  • 1/3 cup olive oil
  • 1 tablespoon oregano dried
  • lemon zest of one
  • lemon juice of 2
  • salt
  • black pepper

Instructions

  1. Add all the ingredients to a large mixing bowl.
  2. Stir until combined. Let sit in the fridge for at least two hours before serving.
