Ingredients
- 16 ounces orzo pasta cooked according to package instructions and cooled
- 1 large cucumber deseeded and diced
- 1/2 red onion diced
- 1 cup feta cheese crumbled
- 3 tablespoons dill chopped, fresh
- 1/2 cup pistachio chopped
- 15.5 ounces chickpeas rinsed and drained
- 1/3 cup olive oil
- 1 tablespoon oregano dried
- lemon zest of one
- lemon juice of 2
- salt
- black pepper
Instructions
- Add all the ingredients to a large mixing bowl.
- Stir until combined. Let sit in the fridge for at least two hours before serving.
