Lemon Parmesan Asparagus

Ingredients

  • 1 pound asparagus
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon lemon zest
  • Juice of 1/2 of a lemon

Instructions

  1. Preheat oven to 400° F. Rinse the asparagus and break off the ends where ever they naturally snap off.
  2. Place the asparagus on a baking sheet and drizzle on the olive oil. Season with Italian seasoning, salt, and pepper. Use your hands to toss until they're coated. Spread into a single layer and place in the oven.
  3. Roast for 7-10 minutes depending on if you're using thin or thick stalks of asparagus.
  4. Remove from the oven and sprinkle on the parmesan cheese. Return to the oven for another minute or until the cheese is melted. Remove from the oven and squeeze lemon juice all over the asparagus and sprinkle on the lemon zest.
