Ingredients

  • 500 g (1lb) chicken mince / ground chicken
  • 2 garlic cloves crushed
  • 1 tbsp lemon zest
  • 1 tsp lemon juice
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs
  • 1 egg
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 tbsp chopped parsley
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Combine all the ingredients in a large bowl and mix until just combined.
  2. With wet hands, form the mixture into 4 patties and place on a parchment-lined plate or baking sheet.
  3. Heat a large, non-stick pan over medium-high heat and add a splash of olive oil. Add the chicken patties and cook for 4-5 minutes per side until the chicken patties are golden brown and cooked through.
  4. Remove from the pan and allow to rest for 5 minutes before serving.
