Ingredients

  • 16 ounces shredded brussels sprouts
  • 1/2 cup shaved Parmesan cheese
  • 1/3 cup toasted sliced almonds
  • zest of a lemon
  • 1/4 cup fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon honey or maple syrup
  • Kosher salt and fresh ground black pepper to taste

  1. In a large serving bowl combine the brussels sprouts, Parmesan cheese and sliced almonds.
  2. Whisk together the lemon zest, juice, dijon mustard, honey, olive oil, salt and pepper. Pour the dressing over the salad and toss to combine. Taste for seasoning and serve.
