Ingredients
- 16 ounces shredded brussels sprouts
- 1/2 cup shaved Parmesan cheese
- 1/3 cup toasted sliced almonds
- zest of a lemon
- 1/4 cup fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon extra virgin olive oil
- 1 tablespoon honey or maple syrup
- Kosher salt and fresh ground black pepper to taste
Instructions
- In a large serving bowl combine the brussels sprouts, Parmesan cheese and sliced almonds.
- Whisk together the lemon zest, juice, dijon mustard, honey, olive oil, salt and pepper. Pour the dressing over the salad and toss to combine. Taste for seasoning and serve.
