Lemon Poppy Seed Dressing

This homemade Lemon Poppy Seed Dressing is made with a handful of ingredients and tastes so much better than store bought salad dressings. A bit sweet, tangy and creamy, this Lemon Poppy Seed Dressing is wonderful drizzled over mixed greens and fruit salads.

Ingredients

  • 1/4 cup fresh lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon poppy seeds
  • Salt and freshly ground pepper to taste
  • 2 teaspoons plain Greek yogurt or mayonnaise optional
  • 1/2 cup mild olive oil

Instructions

  1. In a small bowl, whisk together the lemon juice, honey, Dijon mustard, poppy seeds, salt, pepper and yogurt or mayonnaise if using.
  2. Continue whisking while slowly adding the oil. Taste for seasoning.
