Lemon Poppy Seed Granola

Ingredients

  • ⅓ cup honey or maple syrup
  • ⅓ cup nut butter
  • 1 lemon both the juice and the zest
  • 1 tsp vanilla extract
  • 2½ cups old fashioned rolled oats
  • 1 cup raw cashews
  • 2½ tbsp poppy seeds
  • 1 tsp salt

Instructions

  1. In a bowl, combine honey, nut butter, lemon juice, and vanilla extract. Stir until it is fully mixed together.
  2. Add in the old fashioned rolled oats, raw cashews, poppy seeds, and salt to the nut butter mixture. Mix until everything is combined.
  3. On a lined sheet pan, spread out the granola. Sprinkle the lemon zest on top and bake the granola for 15 minutes. Stir the granola and bake for another 15 minutes. Stir again.
  4. Turn the oven up to 350°F and bake for 5 to 6 minutes. Keeping an eye on it.
  5. Once done, let it cool before enjoying or packing away.
