Ingredients

  • ½ pound Spaghetti
  • 2 teaspoons olive oil
  • 2 cloves garlic minced
  • ½ teaspoon red pepper flakes
  • ½ cup parmesan
  • 1 cup ricotta cheese
  • 2 teaspoons lemon zest
  • ⅓ cup pasta water
  • 1 tablespoon basil fresh, minced

Instructions

  1. Boil the spaghetti according to the package directions.
  2. In a medium skillet over medium heat, add the olive oil.
  3. Once the olive oil is shimmering, add the garlic and red pepper flakes. Stir for 30 seconds.
  4. Add in the parmesan, ricotta, lemon zest, and the pasta water.
  5. Stir to combine let simmer for 2-3 minutes to meld the flavors.
  6. Add the pasta and stir to coat.
  7. Top with fresh basil.
