LEMON TART

Ingredients

For the Tart Crust:
  • 1 ¼ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup powdered sugar
  • 1 egg yolk
  • 1 tablespoon ice water
  • ½ teaspoon vanilla extract
For the Lemon Filling:
  • ¾ cup fresh lemon juice about 4 lemons
  • 1 tablespoon lemon zest
  • ¾ cup granulated sugar
  • 3 eggs
  • ½ cup heavy cream
  • ¼ teaspoon salt

Instructions

Step No.1: Make the Tart Crust

  1. In a food processor, pulse flour, powdered sugar, and cold butter until the mixture resembles coarse crumbs. Add egg yolk, vanilla extract, and ice water. Pulse until the dough comes together. Shape into a disk, wrap in plastic, and chill for 30 minutes.
Step No.2: Bake the Crust
  1. Preheat oven to 350°F (175°C). Roll out the chilled dough and press it into a 9-inch tart pan. Prick the bottom with a fork and bake for 12-15 minutes or until lightly golden. Let it cool.
Step No.3: Prepare the Lemon Filling
  1. In a bowl, whisk together lemon juice, zest, sugar, eggs, cream, and salt until smooth. Strain through a sieve for a silky texture.
Step No.4: Bake the Tart
  1. Pour the lemon filling into the cooled crust. Bake at 325°F (160°C) for 18-20 minutes, or until the filling is set but slightly jiggly in the center. Let it cool completely.
Step No.5: Serve and Enjoy
  1. Chill for at least 2 hours before serving. Dust with powdered sugar or garnish with whipped cream and lemon slices.
